Over the past century the escalation in the incidence of cancer has its parallel in the dramatic decline in the micro-nutrient content (vitamins and minerals) of our foods. This association, it seems, has by and large been ignored by those involved in cancer research.

Today we have a far better understanding of the important role of micro-nutrients in safeguarding our health, and readily accept that deficiencies can be not only detrimental, but fatal (think of vitamin C and scurvy). Somehow, the same reasoning is not applied when it comes to the onset of cancer.
